Easter Sunday on Kauai 2016
Durga Farms
Durga Farms has a delicious sweet potato recipe to add to your Easter menu. Serves 4. Preparation Time: 15 minutes
- 2-3 cups chopped sweet potato
- 2 Tbsp ghee
- Pinch of mineral salt
- 1/2 tsp cinnamon
- 1/2 tsp cardamom seeds
- 10-12 dried or fresh rose petals (optional)
- 1/4 cup fresh chopped cilantro
- Water
Heat the ghee in a pot and add salt, cinnamon and cardamom. Simmer until the aroma comes up. Add the sweet potato and stir to coat the potatoes with the ghee and spices. Add water to 1/2 the height of the potatoes in your pot. Cover and bring to a gentle bubbling simmer for 10 – 15 minutes depending on the size of the pieces, your pot, stove and the temperature in the environment. These are all factors in a recipe that affect the cook time. Cook until a knife goes in easily. No tasting as it will disturb the digestion of the cook!
These are great served with sautéed kale, rice and adzuki beans and many other great combinations.

Easter Sunday Brunch price is $60 for ages 13 and up; $75 Champagne Brunch for 21 and over; $30 for kids ages 5-12, and complimentary for ages 4 and under. Includes full brunch offerings, coffee, tea, fresh-squeezed juices, chef’s selection of weekly specials “made to order”, carving station, French toast, waffle, and pancake bar. Add house Bloody Mary’s, Champagne cocktails, breakfast or bloody beer’s, and a range of items from the full bar.
